Italian Sausage & Peppers

Ready in 30 minutes
Serves 4 people

INGREDIENTS

_ 4 • 4oz D&H Spicy Calabrian or Sweet Italian Pork Sausage
_ 1 • Medium Onion, Sliced
_ 1 • Garlic Clove, Chopped
_ 2 • Red, Green, or Yellow Bell Peppers, Sliced
_ 4 • Sprigs Fresh Oregano
_ 1 • Small Can Diced Tomatoes or 1 Pint Cherry Tomatoes
_ 2 tbsp • Extra Virgin Olive Oil
_ ½ tsp • Kosher or Sea Salt
_ ½ tsp • Ground Black Pepper

 

PREPARATION

1. Heat the oil in a deep skillet over medium heat. Add the sausages and cook until brown on both sides, about 2-3 minutes per side.

2. Remove the sausages from the pan and add the sliced onions and peppers. Cook until lightly browned, about 5 minutes, stirring occasionally.

3. Add the garlic, sprigs of oregano, cherry tomatoes or canned tomatoes, salt, and pepper and stir.

4. Cut the sausages into 1 inch pieces and return to the pan and stir to combine.

5. Turn the heat down to low, cover and continue to cook until the sausages reach an internal temperature of 165ºF.

6. Remove from heat and serve in bowls or in your favorite recipe.

 

TIPS

Sausage and Peppers can be tossed with your favorite pasta, put on a roll, or baked in a lasagna. You can also fill a crockpot with it and take it to a potluck.
