Choripan with Chimichurri Sauce
Ready in 30 minutes
Serves 4 people
INGREDIENTS
_ 4 • 4oz. D&H Mexican Chorizo Picante Sausage links
_ 4 • Long Rolls or Baguette cut into 4 pieces
CHIMICHURRI
_ 1 cup • Chopped Fresh Parsley
_ ¼ cup • Chopped Fresh Oregano
_ ¼ cup • Extra Virgin Olive Oil
_ 2 tbsp • Red Wine Vinegar
_ 1 • Small Shallot, Finely Minced
_ 1 • Garlic Clove, Chopped
_ ½ tsp • Kosher or Sea Salt
_ ½ tsp • Crushed Red Pepper Flakes
_ ½ tsp • Ground Black Pepper
PREPARATION
01. To make the chimichurri place all ingredients in a bowl and stir to combine. Put aside until ready to use.
02. Place the sausages on a grill or in a pan and brown on both sides.
03. Cook sausages until an internal temperature of 165ºF is reached.
04. Cut open the rolls or baguette to make a pocket. Toast or grill the inside of the roll if desired.
05. Place the sausages in the roll and top with the chimichurri.
06. Serve immediately.
TIPS . . .
After the sausages are fully cooked, split them lengthwise and grill a little more before placing in the roll. The chimichurri sauce will fill the opening to take it up a notch!
