Ours is made the traditional way—small-batch and slow-aged—using only antibiotic- and hormone-free pork and a robust blend of classic ingredients: sea salt, Calabrian pepper, black pepper, garlic, and cloves. The result is a firm, flavorful salame with just the right balance of heat, salt, and old-world depth.
