Many cultures around the world have superstitions relating to food and New Year’s celebrations. Here in Berks County, PA, a common one is a meal of Pork and Sauerkraut on New Year’s Day.

As the story goes, chickens scratch backwards, pigs root forward thus implying we are looking forward into the New Year and a delicious slow braise of Pork and Sauerkraut in the slow cooker will bring us luck, health and good fortune in the New Year.

INGREDIENTS FOR
PORK & KRAUT
_ (1) 3lb. D&H Bone-In Pork Butt
_ (1) qt. D&H Sauerkraut
_ (1) qt. Buttery Whipped Potatoes
_ (2) Onions, sliced
_ (1) ½ Stick Unsalted Butter
_ (1) Local Honey Crisp Apple, Cored and Sliced
_ (1) Teaspoon pepper
_ (1) Tablespoon Salt
_ (1) Teaspoon Ground Caraway
_ (1) ½ Cup Apple Juice
PRO-TIP:
Substitute apple juice (included) with a dry white wine.
We prefer PA’s own Galen Glen Dry Riesling!
COOKING INSTRUCTIONS FOR
PORK & KRAUT

Pre-Heat oven to 350 degrees. Let pork come to room temperature. Remove from package. Rub the pork with 1 tablespoon of salt, 1 teaspoon of pepper and 1 teaspoon of ground carraway seeds. Heat a large skillet on high. Place pork in skillet and brown on all sides. Remove pork out of pan and reduce heat to medium-high.

Add butter to pork pan, add 2 onions sliced into the large skillet over medium heat until onions are caramelized.
PRO TIP
You will need to stir onions frequently as they brown; it will take approximately 30 minutes

Add ½ cup apple juice or dry white wine and let reduce by half.

Add the onion mixture along with 1 cored and sliced apple and 16oz. D&H Sauerkraut to bottom of large roasting pan. Place D&H Pork Butt on top of mixture. Cover pan with aluminum foil and roast at 350 degrees for approximately 2hrs. Uncover the roasting pan and continue to roast for another 30 minutes until the meat is browned and is falling off the bone.

Slice and serve pork along with sauerkraut mixture from roasting pan.
