Dundore & Heister Turkey Gravy

This is the recipe you make when turkey is really just an excuse for more gravy. It’s rich, glossy, and built on a proper veggie-and-butter base. Start a new Thanksgiving Day tradition.
INGREDIENTS
_ 1/4 lb grass-fed butter
_ 1/2 cup finely diced carrots
_ 1/2 cup finely diced celery
_ 1/2 cup finely diced white onion
_ 2 tsp ground black pepper
_ 1/2 Tbsp fine sea salt
_ 4 sprigs fresh thyme
_ 5 oz all-purpose flour
_ 6 cups warmed Dundore & Heister Chicken Bone Broth
PREPARATION
01_ Start with the fat.
Melt butter in a medium heavy-bottomed pot (about 4 qt) over medium heat. You want it fully melted and just starting to foam, not brown.
02_ Build the flavor base.
Add carrots, celery, and onion. Cook, stirring occasionally, until the vegetables are softened and glossy but not browned, 6–8 minutes. This is your gravy’s backbone, so don’t rush it.
03_ Season early.
Stir in black pepper, sea salt, and thyme sprigs. Cook another minute or two until everything smells really good and the thyme is fragrant.
04_ Make the roux.
Sprinkle flour evenly over the vegetables. Stir constantly, scraping the bottom of the pot, until the flour is fully hydrated and forms a paste around the veg, about 2 minutes. You’re cooking out the raw flour taste here.
05_ Whisk in the broth.
Slowly add the warmed Dundore & Heister Chicken Bone Broth, whisking as you go to avoid lumps. Start with a cup or two to loosen the roux, then add the rest in a steady stream.
06_ Simmer and thicken.
Bring to a gentle simmer, then reduce heat to low. Cook, stirring occasionally, until the gravy is silky, glossy, and thick enough to coat the back of a spoon, about 25–30 minutes while the turkey rests.
07_ Finish and serve.
Fish out the thyme sprigs. Taste and adjust seasoning with more salt or pepper if needed. Spoon over sliced turkey, mashed potatoes, stuffing—basically anything that will sit still.
