Spicy Chorizo Cheese Dip
Serves: 6

Cook Time: 15 minutes
INGREDIENTS
_ ½ lb • D&H Mexican Chorizo Picante Sausage links
_ 10 oz. • can diced tomatoes with chiles, drained (like Rotel or something similar)
_ 12 oz. • can evaporated milk
_ 12 oz. • shredded Monterey Jack cheese (or whatever shredded cheese you like!)
_ 3 • green onions, diced for garnish

PREPARATION
01. Remove the casings from the Chorizo and combine into a mixing bowl and mix together. Similarly to how you would with ground beef, cook the chorizo in a large skillet over medium heat until it is mostly cooked. Drain any excess fat.
02. Add the drained diced tomatoes with chiles to the skillet. Stir and cook until most of the moisture from the tomatoes has evaporated.
03. Pour in the evaporated milk and stir until heated through.
04. Turn the heat to low and let the mixture cool slightly before adding the cheese. Add the cheese one handful at a time, stirring until fully melted before adding the next handful.
05. Once the cheese has melted into the dip, turn off the heat. Garnish with sliced green onion and serve warm.
