Originally a reference to a method of cooking for broiling a flank steak, our London Broil, taken from the Round section of the steer, is essentially a Top Round steak. This lean cut takes a marinade quite well and should be cooked at a steady medium heat. London Broil should be sliced thinly against the grain and cooked to a medium rare for maximum tenderness. Great as a salad steak or in a steak sandwich.
